Sylvie and Jean Pierre Seve use oak carefully, not to create oaky flavours but
to allow an exchange between oxygen and the developing wine. The results are
spectacular, wine bursting with fresh apple aromas and hints of tropical fruits.
Slightly buttery on the palate with a good acidity.
