The grapes for this wine was picked a bit later than usual. The maceration was done for three days. After that, the fermentation was started in stainless steel barrels. Then, after 30% fermentation, the wine was put into new barrels of French oak, where the wine was aged for 10 months. Distinct aromas of jasmine, ripe green apple, and floral nose. A lovely development of honey, vanilla, and oak on the palate. Beautifully structured.

In the production, quick processing is followed by fermentation and 12-month ageing in French oak barrels, with periodical sediment stirring. Following the ageing in barrels, it is further blended and aged in stainless steel vats and in the bottle. Grimalda White is a terroir wine of pronounced minerality and long finish. Very complex on the nose, with pronounced ripe exotic aromas of pineapple, citrus fruits, and melon, with hints of butter, toasted hazelnuts, fine wood and vanilla opening in the background.
