Paolo Scavino, an Italian winery of unprecedented class. The Barolo represents a selection of fruit from 7 separate vineyard plots spread over the most important plots of Barolo. The fruit from those locations is vinified separately and once each barrel has been tasted, the final assembly is created. Barrels of wine that do not meet the quality standards of the estate are sold as bulk wine. The wine has had 10 months of oak upbringing on barrique and then 12 months in large "casks" and then 12 months in bottle aging. This is a beautiful wine that opens to cherry and blackberry aromas with elegant notes of crushed stone, smoke, licorice and tar. This is an excellent Barolo which is already accessible in the short or medium term.

This wine goes well with red meat (grilled / roasted), lamb, fur game and cheeses that are rich and powerful in taste.
The Nebbiolo grapes (the noble grape of Italy) used for this delicious wine are picked early October. Fermentation on stainless steel follows later. The malolactic fermentation takes place in oak barrels and then a 12-month lag on French barriques. The wine then remains in large French oak barrels for 12 months before bottling. Finally, 1 year of aging in the bottle follows.
