Beautiful powerful, dry red wine made from Cabernet Sauvignon grapes from the beautiful plots of winery De Wetshof from South Africa. The wine has a beautiful ruby red color and on the nose the aromas of honest sweet plum and a light spiciness, currants, berries, raspberries, open and pleasantly sultry. The taste is nice and firm and nice and soft at the same time, smooth and fruity, raspberries and cherries, with a light firmness after. The wine has a fresh and quite powerful attack, with black currant, delicious vanilla, a touch of leather and tobacco, elegant and fresh, firmness, fine acids. Powerful dry red wine. Cherries and cassis, berries, pleasantly spicy note of oak and vanilla, caramel and ripe plum.
This Cabernet Sauvignon goes very well with pasta with braised lamb shank, lamb tenderloin with Provencal herbs, grilled sirloin steak and lamb cutlets. Also delicious with matured cheeses.
The Cabernet needs a slightly warmer climate than the Merlot, and a slightly poorer substrate for the grapes to mature properly. Otherwise, especially the leaves grow, and the grapes do not ripen enough. With the Cabernet Sauvignon, a good ripening of the grapes is only possible due to a good heat during the day, in combination with freshness at night, especially in autumn, in the period before harvest. The grapes come from different vineyards, from which a blend is composed with many shades. After a cold soaking, to give the wine fruit and color, it ferments at a low temperature, at 24 ° C, again for the fruit. During fermentation, the wine is regularly pumped over the skins to give it more color and ripe tannins. Rounding takes place by maturing 20% in wooden barrels of French oak, for about 8 to 10 months, depending on the vintage. This provides more depth and complexity. The rest of the wine matures on stainless steel with French oak bars, which give it some extra wood flavor. This keeps wood and fruit in perfect balance.
