Cabernet Sauvignon grapes have the ability to adapt to the most different climatic conditions mantaining its characteristics and expressing the terroir. This wine has ruby red colour drifting to violet, it is aromatic, floral and gently solid. The taste is complex, elegant and suitable for a long aging. Only 1,200 bottles of this exceptional wine are produced per year.
The harvest was done by hand in boxes of 15 kg at the beginning of October, choosing the best bunches of Cabernet Sauvignon. Then it proceeded with a soft pressing in stainless steel tank which was followed by the start of the alcoholic fermentation at temperatures between 26-30 ° C for a week followed by maceration for a total of about 10-15 days. The wine is transferred to French oak barrels for malolactic fermentation (30% new). During this period, the barrels are rolled along 8m of tracks four times a day to promote balance and maximum flavour extraction. The aging then takes place for about 18 months in barriques and then, for at least six months in the bottle before release. Strong demand for this riserva places pressure on availability, early ordering is recommended.
Just 10 hectares of soils were analysed and selected by revered Oenologist Fabrizio Moltard to produce an exceptional marriage of Tuscan terroir with French varietals. As such, Monte Solaio vineyard delivers Super Tuscan IGT wines using Syrah, Cabernet Sauvignon, Merlot, Cabernet Franc, Viognier and indigenous varieties such as Pugnitello, Colorino, Vermentino and Ansonica.
No grapes enter or leave the winery. Each wine has been macerated, blended, aged, bottled and labelled by the same small team, under the careful eye of Head Vintner, Antonio Bonaguidi.
