Seyit Karagözoglu founded Paşaeli in 2000, aiming to revive and celebrate the forgotten native grapes of Turkey. Yapincak is from Tekirdag in north-western Anatolia, its spotted skin meaning it takes its name from an old Turkish word for young freckled girls! Seyit's Yapincak comes from a single 45-year-old vineyard overlooking the sea of Marmara. Typically used for blending due to its lower acidity, these fresh maritime conditions permitted Paşaeli to be the first winery to bottle Yapincak on its own. Made 90% in stainless steel tanks and 10% in new or second use French oak, then aged on lees for 3 months. Pale golden, rich aroma, intense lemons and clementines, quince and a crisp, dry finish to a remarkable rarity.
